Octo Sushi is the brainchild of a couple of transplants who spent a decade slinging Japanese cuisine in the South Texas metro. They came hoping to bring a taste of tex mex and sunshine to seattle grey sushi, found a weird disjointed, yet compelling space on Capitol Hill--- a separated tiny front (The Old Crave on 12 Ave) and big tall open space in the back previously home to dressing rooms and fringe theatre. They came to us to make it happen. We embraced the existing structure, separations and all, old brick walls, funky ceilings, pipes etc. with new color combinations, Japanese Pop Art, glowing light, and growing things-mixed up with industrial ropes and Japanese modern plexi.
